Whatcha Eating: Chicken Thigh Dilemma

Since I burned the hell out of my leg last week, I've only been able to run to the store once.  So I've been playing a sort of game of "what can I make from stuff in my pantry" for meals lately.

Today at our house?

I have some boneless, skinless chicken thighs in the fridge, and I'm trying to decide what to do with them for dinner.  There are so many yummy options, and I'm having a tough time deciding.

I know there will be a vegetable side of some sort -- probably something with a mix of zucchini, tomatoes, onions, and whatever else I can scare up from our fridge, freezer or pantry.  Along with salad possibilities because I have romaine and cucumbers in the fridge as well.

But that leaves the chicken.  Thus far, I've found and considered:


-- Chicken Souvlaki
-- Mediterranean Chicken And Potatoes
-- Spicy Honey-Brushed Chicken Thighs
-- Baked Curry-Glazed Chicken
-- Roasted Chicken Thighs Provencal
-- Seoul-ful Chicken
-- Chicken Tagine With Pine Nut Couscous
-- Spiced Chicken Thighs
-- Crockpot Butter Chicken
-- Crockpot Thai Curry

But I haven't made up my mind yet.  Need to do so soon, though, or I'll miss the window on a couple of the more crockpot-friendly recipes.  Decisions, decisions...so, whatcha making for dinner at your house?

UPDATE:  Since I had a large "family pack" of boneless, skinless chicken thighs, I ended up doing a freezer pack of the chicken souvlaki recipe -- I made the marinade, added the chicken into a large ziploc freezer bag, and then shook it around a bit to disperse the marinade to coat all the chicken thighs in the bag.  I popped that in the freezer for later, probably some time early next week -- that will make a great dinner with a salad, some pita chips or cucumber spears and some hummus and tzatziki.  Yum!

The other half of the chicken is currently bubbling away in my crockpot and will be a modified version of the crockpot Butter Chicken recipe and a butter chicken recipe from the The Indian Slow Cooker cookbook that I bought recently (with Amazon money from your purchases on this blog -- thank you, guys!). Alas, I didn't have all the ingredients to make either recipe on its own, so I've sort of put together a hybrid of them.

If this turns out as uber-yummy as it currently smells I will absolutely post the recipe later.  Because right now?  The smell is so good that it is all I can do to not eat it and it has only been cooking an hour or so.

I'll pop some brown basmati rice in the rice cooker in a bit to eat with it and I pulled some whole wheat naan out of the freezer that I bought on sale at our local Kroger a few weeks ago -- they had several packages on sale on the discount bread rack, and I bought a few and immediately popped them in the freezer.  Yay, well-stocked pantry!

Hope you're feeling better. Am so sorry to belatedly read of your accident.

Not sure what I'll do for dinner tonight. Am certain that I'll raise a glass to RichRod's being gone from Michigan. I'm guessing there may be a few toasts in parts of WV.

Thanks, Jane -- had an appointment for an antibiotic soak this morning with the physical therapist who has been treating my burn. It is looking much, much better. It hurts and itches like crazy, but that's a really good sign that I didn't do permanent damage and you can see that it is finally starting to heal. Am beyond relieved that I've managed to get to that point already.

And yes, RichRod made his own lousy bed, and he'll have to wallow in it. But I do feel very sorry for his family, some of whom I actually have known since before he was a coach at WVU and who are fairly nice folks -- they live here locally and he has made things really miserable for them by making himself such a target for ire that they have to constantly hear about it from mouthy people in the neighborhood. So sad, especially when it was self-inflicted ego that was not of any of their making. Ugh.
