It's All Greek To Me

It has been a long, long couple of weeks of school play preparation, dress rehearsals, make-up applications and just plain running around like a crazy person.
The thing that sticks with me most after all of this?

Is that I have got to take better care of myself, including eating more healthfully and getting regular exercise.  Because at the end of this two week activity sprint?  I am worn out.

And no amount of extra sleep appears to be helping me to bounce back as yet.

It is amazing how much punishment you can heap on your body when you are younger and in better shape, and how the same amount of activity and exhaustion can nearly sideline you as you get older.  I woke up this morning feeling about 800 years old.  This cannot be how I live the rest of my life, because I refuse to just curl up and do nothing -- activity needs to be something I can do.  But in order to be smart about it, given the autoimmune issues in play for me, I need to make healthy choices every day that minimize and heal instead of make things worse.  (Let's just say that last week's pepperoni roll grab for lunch for everyone was not one of my best moments and leave it at that.)

So today?  I'm going to take a peek at some healthy recipes from a cuisine that is said to be very anti-inflammatory and healthful, so long as you choose your meals from it wisely and so long as they include lots of veggies, herbs, lean meats and olive oil with the emphasis on the veggies, veggies and more veggies.
