Two victories today:
1) I tried the Crockpot Sticky Chicken recipe again for dinner -- this time using a slow cooker liner. Worked like a charm. No nasty mess to clean up, and the chicken came out just as moist and tender as the last time. Boo yah!
2) Made a quick and easy side dish to go with it that included zucchini. And The Peanut loved it -- and loved the zucchini. Gotta love a veggie victory in this house.
The side dish was so easy, I had to share what I did:
Heat 1 Tbsp. olive oil in a nonstick skillet. Heat over med-high heat.
Chop 3 zucchini into quarters, and then slice each thinly. Add 2 tsp. minced garlic to pan and 1 minced shallot, along with a generous sprinkle of Penzey's Tuscan Sunset (love this stuff); let this cook for about 30 seconds until fragrant. Then add in zucchini, stir well to coat with oil and spices, and cook, stirring, for about 4 minutes.
Chop up a red bell pepper, after seeding, and toss the pepper into the pan as well. Cook until veggies are all crisp-tender.
Stir the veggies into a cooked pouch of brown and wild rice blend. Tasty stuff.
