Following on the heels of the Great Squash Recipe Round-Up, I found a goldmine of squash recipes today at our local library.
Clearly my abundance of squash and being mystified on how to handle them is a little more of a universal issue than I originally thought. Because in The Classic Zucchini Cookbook: 225 Recipes for All Kinds of Squash, the authors go all out from appetizers to desserts and everything in between.
I consider myself kind of a foodie, but the range of their recipes amazed me.
And not just because their zucchini pancake recipe on page 101 is absolutely genius-level mom bait. At least if you have a picky eater like I do, anyway -- imagine getting veggies in your child in their breakfast pancakes. (My plan is top top them with some applesauce, thereby also getting in a little fruit. Boo yah!)
Anyway, I know some of you are also zucchini-and-squash overloaded, so I just had to share.
PS -- I was so wrong. The genius recipe? Zucchini Pizza Bites on page 16. You use sliced zucchini rounds as the crust instead of dough, and put on pizza toppings from there. Sheer genius.

It occurs to me that I've made pumpkin pancakes about a gazillion times, but for some reason my brain had classified that as "fruit" and not "veggie." Must be the association with pie in my mind, eh? I wonder what pumpkin-zucchini pancakes with some spices like gingerbread or pie would taste like? Now I'm curious...and hungry.
