Squashed? Zucchini Recipe Round-Up

The summer squash are growing gangbusters at our house.  Already.

I planted hills on either side of our front porch, and it looks like a lovely foundation planting unless you are used to a summer garden.

The leaves are beautifully sculptural, so it's really lovely.

Last year, I only planted zucchini.  This year, I decided to add a hill of yellow summer squash, and boy is it producing.

For some reason, though, the zucchini is not growing as well this year.  I've tried to baby it along, with a little compost tea mixed into the watering can.  There haven't been any pests that I've been able to pinpoint, and they are blooming, but?  The plants are half the size of the yellow squash ones.  Weirdly stunted for reasons I haven't been able to figure out.

But there are blooms all over them, so if I get zucchini?  I suppose it's no big deal.  It's a mystery.

Right now, I have three picked yellow squash on my counter, a zucchini in the fridge, and at least two more yellow squash that need picking today.  It's time to start compiling some good squash recipes before I start passing them out around the neighborhood.

slice into chunks the zuch and the yellow squash. add in a can of corn and a small can of stewed tomatoes. a wee bit of crushed garlic into the pot and warm on the stovetop. salt and pepper to taste and if indulging, add a pat of butter to the pot to melt down into it.
